Chocolate Fudge Cupcakes with Buttercream Frosting

For the filling:

Melt one cup of your choice of chocolate with one cup of butter. (Don't use generic semisweet chocolate its gross) I used dark chocolate chips for this part. Melt in microwave for about 1 minute complete melting process with stirring.

Add two cups of powdered sugar to the mixture and mix well.

For the cupcake:

1 3/4 cups all-purpose flour ( I've learned the hard way to sift your flour or use cake flour)
1/4 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 sticks of softened unsalted butter
3/4 cup lightly packed brown sugar
2 large eggs
2 ounces unsweetened chocolate (melted)
1 cup buttermilk
1 teaspoon vanilla extract


Preheat oven to 350*F.
Beat butter and sugar until light and fluffy (takes about 3-4 minutes). Whisk together flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl. Add the eggs (one at a time is best) beat eggs and melted chocolate in. Reduce speed to low and add in the flour mixture alternating with the buttermilk. Begin and end with the flour mixture until it is all gone. Stir in vanilla.

Fill your choice of adorable cupcake liner cups 3/4 full of the cake batter with 2 tsp. of the filling batter on top. Let filling just rest on the top DO NOT stir in cake batter.

Bake 15- 20 minutes (mine were perfect at about 16 minutes)

Let cool until you make them beautiful with icing.


Buttercream Icing:

1/3 cup butter
1/4 cup evaporated milk
1 teaspoon vanilla
1/4 teaspoon salt
4c of powdered sugar (I only use about 3 - 3 1/2 cups)

Mix butter until creamy. Add evaporated milk, vanilla, salt, and one cup of powdered sugar. Mix on stir speed for 30 seconds. mix speed 2 for about a minute and a half. On stir speed at remaining cups of powdered sugar 1 cup at a time. I only added about 2 more cups so it wasnt too sweet. Beat on speed four until smooth.
